Dice the sweet potatoes up to 2 days in advance and store them in water in the refrigerator.
Prepare the buffalo chicken mixture up to 2 days ahead and refrigerate until ready to bake.
Shred the cheese ahead of time to make dinner even quicker.
Storage & Reheating: Store the buffalo chicken and sweet potatoes in separate airtight containers in the refrigerator for up to 4 days. Reheat both separately, then serve the warm buffalo chicken over the sweet potatoes.
Use a rotisserie chicken to save time, and make the buffalo chicken mixture ahead of time. While it bakes, cook the sweet potatoes on the stovetop so everything is ready at the same time.
For Younger Kids: Before mixing in the buffalo sauce, set aside some of the shredded chicken. Mix it with a their favorite sauce or dressing and mozzarella for a mild, creamy version, then serve it over the sweet potatoes alongside the buffalo chicken for the rest of the family.
