Banana Bread Muffins

Turn cooking mode on

Step 1

Preheat your oven to 350°F. Prepare muffin pan.

Step 2

In a mixing bowl, mash the ripe bananas until smooth. Add the cottage cheese and stir to combine.

Mix in the melted coconut oil, maple syrup, beaten egg, and vanilla extract.

1/4 cup Coconut oil

1/4 cup Maple syrup

1 Egg

1 tsp Vanilla extract

Sprinkle the baking soda, cinnamon, and salt over the mixture and stir in.

1 tsp Cinnamon

1/4 tsp Salt

Step 5

Add the flour and mix until just combined.

2 cup All-purpose flour

Step 6

Fold in the chocolate chips gently.

1/2 cup Chocolate chips

Step 7

Divide the batter evenly among the muffin cups.

Step 8

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove from oven and let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Step 10

Store on the counter for 2 days or in the fridge for up to a week.
