Step 1
In a mixing bowl, combine the Greek yogurt, peanut butter, protein powder, and vanilla extract. Mix until combined.

Line a baking sheet with parchment paper. Spread the yogurt mixture evenly.

In a saucepan, melt the dark chocolate and coconut oil together, stirring until smooth.

Pour the chocolate over the yogurt mixture, spreading it evenly. Sprinkle a pinch of sea salt on top.
Step 5
Place the tray in the freezer and let it set for at least 2-3 hours, or until completely frozen.

Once frozen, break the bark into pieces and enjoy. Store any leftovers in an airtight container in the freezer.
