Homemade Marshmallows

Method

Turn cooking mode on

Step 1

Bloom the gelatin in ¼ cup of the water. Let it sit.

2 tbsp Grass-fed gelatin

1/2 cup Water

Step 2

In a small saucepan, bring the other ¼ cup water, honey, and vanilla to a gentle boil.

1/2 cup Honey

1/2 tsp Vanilla extract

Step 3

Pour the hot mixture into the bloomed gelatin in a stand mixer and beat on high until it turns white, glossy, and fluffy, about 6 minutes.

Step 4

Immediately pour into a parchment-lined 8x8 dish. Let it sit for a few hours or overnight to fully set.

Step 5

Dust with arrowroot powder or powdered sugar and cut into squares.

Just as a reminder it’s not always about doing everything from scratch, but knowing how in case you ever need to. Homemade marshmallows are so easy to make and honestly, so much better than the ones at the store. They’re made with real ingredients and are actually gut-friendly thanks to the grass-fed gelatin. Why they’re better for you: -Glycine (in the gelatin) helps balance the sugar. So you’re less likely to get a big blood sugar spike from the honey. -Gelatin is rich in amino acids like glycine and proline that help repair and strengthen the gut lining, which is helpful for anyone with digestive issues or leaky gut. -Gelatin binds to water and supports smooth digestion. -Glycine also has anti-inflammatory properties that can promote long-term gut repair.

Easy to make and my toddler loves them. I used this because I wanted to make Rice Krispies, they also turned out great!
