Tried doubling the recipe. Wish we hadn’t. Turned out great though. I probably didn’t use enough spinach because with double the recipe it was hard to fit more spinach in the pan. Would make again and not double. Poppy enjoyed the smell of everything cooking, as well as the spice, rice and tomatoes. (12/8/25)
