Step 1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2
In a large bowl, mix together the almond flour, cottage cheese, honey or maple syrup, and baking soda until well combined.
Step 3
Roll the dough into a large ball and divide it into 4 equal pieces. Roll each piece into a smaller ball, then gently flatten it into a donut shape. Be careful not to press too thin, as they may break. Use your finger or a small utensil to poke a hole through the center of each donut.
Step 4
Brush the tops of the donuts with melted butter for added flavor and moisture.
Step 5
Place the donuts on the prepared baking sheet and bake for 22-26 minutes, or until they are firm and lightly golden.
Step 6
Remove the donuts from the oven and let them cool completely on a wire rack.
Step 7
While the donuts cool, melt the dark chocolate chips and coconut oil together in a small saucepan over low heat, stirring until smooth.
Step 8
Dip each donut into the melted chocolate, coating the tops. Top with sprinkles.
Step 9
Refrigerate until the chocolate sets.
Step 10
Store in an airtight container in the refrigerator.
