Baked Oatmeal

Warm, comforting baked oats loaded with berries, perfect for a cozy breakfast or snack.

Ingredients

Method

Turn cooking mode on

Step 1

Preheat oven to 375°F and grease an 8x8 or 9x9 inch baking dish.

Step 2

In a medium bowl, mix oats, cinnamon, baking powder, and salt.

2 cup Rolled oats

2 tsp Cinnamon

1 tsp Baking powder

1/2 tsp Salt

Step 3

In a separate bowl, whisk milk, maple syrup, and eggs. Stir in melted coconut oil (or butter) and vanilla.

1 3/4 cup Milk of choice

1/3 cup Maple syrup

2 Eggs

3 tbsp Coconut oil

1 tbsp Vanilla extract

Step 4

Set aside ½ cup of berries. Spread the remaining berries evenly on the bottom of the prepared baking dish.

1 pint Berries

Step 5

Combine the oat mixture with the wet mixture and pour evenly over the berries in the dish.

Step 6

Sprinkle the reserved ½ cup of berries on top.

Step 7

Bake for 40–50 minutes, or until the top is golden and the oatmeal is set.

Step 8

Let rest 5–10 minutes before serving. Top with yogurt, peanut butter, or your favorite toppings if desired.

I did frozen raspberries and added 2 tbsp of flaxseed to add a little more fiber and protein. It was delicious! Best baked oatmeal recipe I’ve tried. Thanks!
