Sweet Potato Blondies

Method

Turn cooking mode on

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper or lightly grease it.

Step 2

In a medium bowl, combine the mashed sweet potato, peanut butter, maple syrup, and vanilla extract. Mix until smooth and well combined.

Step 3

Add in the flour, baking soda, baking powder, cinnamon, and sea salt. Stir until everything is fully incorporated.

Step 4

Fold in the chocolate chips.

Step 5

Pour the batter into the prepared baking dish and spread it out evenly. It will be very thick.

Step 6

Bake for 20-25 minutes, or until the edges are golden.

Step 7

Allow the blondies to cool in the pan before slicing into squares.

Step 8

Store any leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
