  • Cook the rice up to 4 days ahead.
  • Chop all the vegetables and store them in separate containers.
  • Make the tzatziki a day or two in advance. The flavor gets even better after it sits.
  • The gyro meat can also be cooked ahead and reheated when ready to serve.

Store the meat, rice, and toppings separately in airtight containers for up to 4 days. Reheat the meat and rice, then assemble the bowls with the fresh toppings and tzatziki.

Prep the rice, veggies, and homemade tzatziki during your Sunday meal prep. On dinner night, all you have to do is bake the gyro meat and build your bowls in minutes.
