PB&J Banana Pancake Bites

An easy toddler breakfast that you can prepare the night before to make your mornings even easier! Remove the muffin pan from the fridge, uncover it, and bake the pancake bites for 12-15 minutes, or until they are golden brown and cooked through.

Method

Turn cooking mode on

Step 1

Preheat the oven to 350°F (175°C). Grease a mini muffin pan or add liners.

Step 2

Prepare the pancake batter.

1 cup Pancake mix

Step 3

Pour a small amount of batter into each muffin cup, a little less than half the cup.

Step 4

Add a slice of banana, or jam.

1 Banana

Step 5

Add a small dollop of peanut butter on top.

Peanut butter

Step 6

Cover with more batter to fill the cup.

Step 7

Bake for 10-12 minutes, or until golden and cooked through.

Step 8

Allow to cool slightly before serving.

Step 9

Serve with some protein to help balance out their blood sugar to keep them full till lunch!
