In a small saucepan over medium heat, combine the diced strawberries, date sugar, and lemon juice.
1 cup Strawberries
1 tbsp Date sugar
1 tbsp Lemon juice
Step 2
Cook while mashing the strawberries until they break down and release their juices (about 5–7 minutes).
Step 3
Remove from heat and allow to cool completely.
Step 4

Step 5
In a saucepan, mix the honey with the remaining 1/2 cup of water. Heat over medium heat until it reaches a light boil, then remove from heat.
1 cup Honey
Step 6
While mixing on low speed, slowly pour in the hot honey mixture over the bloomed gelatin.
Step 7
Once combined, increase the mixer speed to high and whip for 6-8 minutes, or until the mixture becomes fluffy and doubles in volume.
Step 8
Pour the mixture into a parchment paper-lined baking dish. Spread evenly.
Step 9
Let it set for a few hours or overnight at room temperature.
Step 10
Once firm, cut into squares or use cookie cutters to make fun shapes.
Step 11
Store in an airtight container at room temperature for up to a week.

Make these gut healthy marshmallows with your toddler. The best part is knowing there is real ingredients and no refined sugars. Gelatin is great also for your toddler’s gut health because gelatin helps strengthen their stomach lining and supports good digestion. Gelatin has glycine, an amino acid that balances out the sugar in the juice and fruit, so it won’t cause a blood sugar spike. It’s a simple, natural, and fun way to support their gut health and give them a snack they love!
